Jason Atherton has struck lightning with the opening of Sael, located in Saint James Market, a brasserie celebrating the British Isles.
Seasonal ingredients and traditional recipes inspire the menu at Sael, Atherton and Head Chef Dale Bainbridge have mastered the concept of iconic British culture to offer a dining experience that honours our culinary heritage.
London’s dining scene has long been home to world-class restaurants, but Jason Atherton’s latest project, Sael, is an addition worth celebrating. Located in the stylish St. James’s Market, Sael brings together a mix of fine culinary artistry and thoughtfully crafted interiors, creating a distinctive experience that draws on Atherton’s signature mix of sophistication and warmth.
A Tasteful Interior: Modern Comfort Meets Timeless Design.
Step into Sael, and you’ll find yourself immersed in an elegant and welcoming dining area. The restaurant’s design choices reflect a balance of contemporary luxury and subtle nods to classic elements. Upholstered bentwood chairs are strategically placed throughout, providing diners with a relaxed, refined atmosphere in which to enjoy their meal. Their curved wood frames and plush upholstery, beautifully contrast the rich green, deep button chesterfield fixed seating while bringing a fresh take on the timeless aesthetic.
The bespoke tabletops and bases at Sael add a unique and cohesive design element to the space. Crafted specifically for the restaurant, each table showcases a level of detail that reflects Atherton’s commitment to quality and individuality in his dishes. Our bespoke fluted Riffe table bases have been designed with a ridged petal profile and a bold timber and metal base plate. Atop these bases sit unique marmoleum tops, a hypnotising swirling pattern filled with deep shades of brown and cream surrounded by a solid oak border. Showcasing a mix of strength and elegance, each piece has a strong visual presence while leaving room for the food to remain the centre piece. This dedication to detail in the furniture gives Sael’s interior a cohesive and sophisticated look while creating an inclusive atmosphere that tells the world that Sael is a place for everyone to enjoy.

Apples and Pears: A Stylish Cocktail Bar Above Sael
Up the stairs above Sael, guests can find Apples & Pears, a cocktail bar that adds an independent but complementary vibe to Atherton’s newest venue. The design of the bar presents a dramatic contrast to the restaurant below, creating a setting that is both vibrant and intimate. Like Sael, the bar features bespoke elements that emphasise quality and comfort, but here, the focus is on crafting an inviting and sexy social space for special evenings and intimate gatherings.
Our bespoke fixed seating in Apples & Pears stands out as both practical and stylish, with elegant lines and plush upholstery that enhance the space’s intimate atmosphere. Each piece is tailored to fit seamlessly within the interior, blending form with function in a way that feels both modern and timeless. The curved bespoke sofas are an especially striking element; positioned to encourage conversation, and upholstered in vivid burgundy velvet, these seating arrangements make the bar feel cosy and familiar while still embodying the sophisticated aesthetic of Atherton’s brand. Stain and scratch resistant marble effect resin top with a gorgeous pink hued cream background and eye-catching red veining. The tops perfectly tie together the red and purple colour scheme while adding some lighter colour tones.
While the cocktail bar has swapped out the Sael’s bentwood furniture for the sumptuous upholstered London bar stool and side chair. The two spaces have shared design elements and features. Warm, ambient lighting and thoughtfully curated brit pop decor fill the room in tribute to British icons of music and fashion. Apples & Pears is a place for patrons to revel the night away with a creative cocktail or a glass of fine wine while a DJ plays late into the night. The bar’s design perfectly complements the culinary experience at Sael, creating a harmonious flow between the two spaces while also allowing each to maintain its own distinct atmosphere.
