A Taste of Spain in London: Inside Sabor’s Refreshed Look

Founded by Nieves Barragán and José Etura, Sabor, meaning ‘Flavour’ in Spanish, takes diners on an immersive journey across Spain, from the lively tapas bars of Andalucía to the rustic asadors of Castile and the seafood havens of Galicia. Their vision was not only to capture the authentic flavours of Spain but also to showcase traditional ingredients, cooking methods, and a relaxed, convivial approach to dining. In 2024, we were proud to contribute to the restaurant’s look refresh, further enhancing the warmth and character of this celebrated space.

A History of Flavour

Since opening its doors in 2018, Sabor has established itself as a landmark of Spanish gastronomy in London. Located on Heddon Street, the restaurant is designed to give diners a complete journey through Spain’s culinary traditions. Its four distinct areasLa Mesa, The Counter, The Bar, and El Asadoroffer a unique dining experience, from intimate shared meals to lively chef led encounters. For those who prefer to dine outdoors, the al fresco terrace extends the vibrancy of Sabor into the open air.

Recognition came quickly. Just months after opening, Sabor was awarded a coveted Michelin star, affirming not only the culinary vision of Nieves and José but also the restaurant’s commitment to hospitality and authenticity. It has since become a reference point for both Londoners and visitors seeking an authentic taste of Spain in the heart of the city.

The Location

What makes Sabor stand out is the way it layers diverse experiences across its different spaces. On the ground floor, guests can explore the Sabor Bar, where Spanish vermouths, sherries, wines, gins, and beers set the tone for a lively gathering. Just steps away lies The Counter, an intimate setting where diners share bar stools with chefs and enjoy a menu that changes daily. Fresh fish, prepared by Sabor’s in house fishmonger, sits alongside regional favourites from the Basque Country, Catalonia, and beyond.

Also on the ground floor is La Mesa, the restaurant’s largest communal table, seating up to 10. This space is designed for celebrations, bringing together friends, family, or colleagues over shared tapas and special dishes. Ascend the spiral staircase to the first floor and you’ll find El Asador, home to a traditional Castilian wood fired oven and gleaming copper pans sourced directly from Galicia.

The Interiors

The interiors of Sabor are as carefully considered as its menu, designed to balance comfort and sophistication. Bright natural light pours through large ceiling windows, illuminating solid wood floors, exposed brick walls, and colourful Spanish tiles that root the space in Mediterranean tradition. The open kitchen creates a sense of theatre, allowing diners to watch the artistry unfold from leather banquettes or bar stools.

We were honoured to contribute to this environment by supplying bespoke furniture that complements the restaurant’s design ethos. Among the standout pieces are custom marble tables in warm pink and beige tones, which add a subtle touch of luxury while harmonising with the earthy palette. Alongside them, our Naika dining chairs, featuring walnut backrests and upholstered seats, bring both comfort and refinement. Each item was designed, sourced, and delivered with precision to ensure seamless integration into the space, reinforcing Sabor’s welcoming yet elevated atmosphere.
